And since misery loves company I am now going to share with you the recipe that he used, but I highly suggest that you scale back in the eating department, unlike myself ;)
Fair warning, these are not your typical “Laura” cookies. They are full on sinful and sugar-y :) I mean it was my birthday, right?
THEY ARE SO DELICIOUS.
DOUBLE CHOCOLATE CHIP COOKIES
- 1/2 cup non-hydrogenated all vegetable shortening

Preheat oven to 350 degrees F (175 degrees C).
In large bowl, beat butter, shortening, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips.
Cool dough mixture in fridge for approx. 30 mins. Drop by rounded teaspoonfuls onto un-greased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or just until set. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
*Note. Normally I would suggest eating the cookies warm from the oven with a glass of milk, but we discovered that these cookies — in all their chocolate-y glory — tasted much more delicious after having completely cooled. Crazy right?
